Cook Time: 1 hour
225g/8oz self-raising flour
350g packet of fruit mix
300ml/½ pint cold tea
125g/4oz golden caster sugar
1 egg, beaten
Good pinch of mixed spice
Ring or other charms
Honey, for decoration
Place the fruit and tea in a bowl and leave to soak overnight.
Add the sugar, egg, flour and mixed spice, then mix well.
Wrap the ring and any other charms securely in greaseproof paper and stir them into the mixture.
Transfer the mixture to a greased and base-lined 20cm/8-inch round cake tin or a 900g/2lb loaf tin.
Bake in a preheated oven at 170°C/325°F/Gas Mark 3 for approximately one hour, or until risen and firm to the touch.
Cool on a wire tray. Once cold, wrap in greaseproof paper and keep for two days before cutting.
Melted honey may be brushed over the brack before cutting.
